Serves 4
1 cup white wine vinegar
1 cup Old Orchard Ruby Red Grapefruit Juice Cocktail
1 shallot minced
1 teaspoon Dijon mustard
2 oz. sugar by volume
¼ teaspoon salt
¼ teaspoon pepper
2 cups olive oil
1) Combine first 7 ingredients in a medium sized mixing bowl.
2) Slowly wisk in 2 cups of olive oil to produce an emulsification.
3) Serve with grapefruit sections and avocado slices with fresh spring mix.
