Streusel:
1/3 cup flour
1/3 cup almonds
3 tablespoons brown sugar, packed
2 teaspoons paprika
1/4 cup butter, diced small
4 pounds sweet potatoes
1/3 cup Old Orchard Orange Juice
2 tablespoons brown sugar, packed
2 tablespoons butter, room temperature
1 1/2 teaspoons grated orange peel
Place streusel ingredients in mixer until it is in small clumps. Place in bowl and refrigerate for one hour. Preheat oven to 375°. Bake sweet potatoes for one hour or until tender. Peel off the skin after they have cooled. Mash the flesh in a large bowl, and mix in the rest of the ingredients. Place mixture into a baking pan and sprinkle the streusel on the potatoes. Heat oven to 400° and bake for about 40 minutes. |
